Brazilian Rabada Recipe (Oxtail)

Brazilian Rabada recipe, it's time to learn how to make a typical Brazilian recipe, created right here in the country and loved by the whole national territory.

It is the oxtail in Portuguese Rabada, which is always at the Brazilian table at a special weekend lunch with the family.

Rabada is a super traditional dish in the countryside and is made with the ox's tail, from which this name is born.

It is well cooked in a pressure cooker with vegetables, therefore sautéing to give the dish a good flavor.

Ingredients

  • 2 kg of fresh oxtail
  • Salt to taste
  • 1 onion
  • Black pepper to taste
  • 1 tooth of garlic
  • Parsley
  • 3 tablespoons of tomato sauce
  • 4 spoons of olive oil

Method

Step 1

First wash the oxtail with vinegar.

Step 2

Then season with salt, pepper and green smell.

Step 3

In a 7 liter pressure cooker, add the olive oil.

Step 4

Add the chopped onion and garlic.

Step 5

When it is golden brown, roll the oxtail and stir to add the dressing.

Step 6

Aggiungere acqua fino a coprire la coda di bue, coprire e lasciare cuocere, dopo aver preso pressione per 30 minuti. Se lo fare in padella aperta cuocere per circa 3 ore o fino a quando non sfila completamente la carne

Step 7

Then, when the oxtail is soft, pour the tomato sauce, check the salt and pepper.

Step 8

Boil it again and turn it off.

Step 9

Leave to cool slightly until the oil rises everywhere.

Step 10

With a ladle remove all the oil located on top, leaving the plate softer.

    ciao volevo un informazione se per fare la rabada non ho la pentola a pressione ma ne uso una normale quanto devo farla cuocere?
    Ed è meglio con o senza coperchio?

      Ciao scusa per il ritardo non mi era arrivato la notifica, comunque la devi cucinare nella padella per circa 3 ore, o fino a quando la carne sarà morbida e si sfila.
