Tucupi Recipe
Tucupi Recipe is a traditional Brazilian sauce made from sap extracted from the cassava root. Yellow in color, the sauce is used for cooking.
Making the sauce is a fairly long process. Without the right cooking, the sap is poisonous.
What makes raw juice inedible is the presence of cyanide. After it is brought through a long-lasting cooking process, it loses the effect of cyanide.
Ingredients
- 3 Kg of Cassava Chopped into cubes
- 1 liter of water
Method
Step 1
Blend the pieces of cassava in a blender a little at a time with a liter of water, gradually add the pieces of cassava.
Step 2
dissolve the liquid inside a container with the help of a cloth. and repeat the blender procedure until you end up with cassava.
Step 3
Blend the pieces of cassava in a blender a little at a time with a liter of water, gradually add the pieces of cassava. the less water you use the better the tucupi comes
Step 4
Put everything you have whisked back into a piece of cotton to let out the liquid which will then become the tucupi
Step 5
Blend the pieces of cassava in a blender a little at a time with a liter of water, gradually add the pieces of cassava.
Step 6
Leave this milky liquid (manipueira) to rest for 4 hours, after which it separates the sedimented starch from the yellow liquid. see photo
Step 7
(the starch is the gum, which can be dried in the sun to become starch or used still wet to make the tapioca or the rubber cream that constitutes the tacaca recipe
