Some tips are very valid for this cheese recipe to be perfect. One is the type of coconut used. I prefer freshly grated coconut. Quijadinha is wetter with fresh coconut.
Leave in the oven for a long time, to create that golden cone underneath which is the best part of the cheese. And if you use simple grated coconut, add double the coconut of the recipe.

Ingredients
- 200 g grated coconut (fresh or packaged)
- 200 ml of coconut milk
- 1 can of condensed milk
- 2 eggs
- 5 tablespoons of grated Parmesan cheese
- 2 tablespoons unsalted melted butter
Method
Step 1
Put the grated coconut in a container and mix with the coconut milk. Reserve.
Step 2
Beat the eggs and add the condensed milk. Then add the butter and mix well.
Step 3
Add the coconut and cheese and mix until smooth.
Step 4
Arrange in individual molds with the help of a spoon. I used the cupcake ones.
Step 5
Place in the preheated oven for 45-55 minutes. Until they are firm and golden.
