Frango ao catupiry (Cream Cheese Chicken), many people confuse it with a Chicken Stroganoff, but in reality this is a different recipe and it is simply wonderful!

Ingredients
- 8 chicken thighs
- 4 tomato
- Juice of 2 Lime
- 8 spring onion
- milk to taste
- 200 grams of spreadable cheese (I use Parmesan cream)
- 2 cloves of garlic
- to taste extra virgin olive oil
- salt to taste
- pepper to taste
Method
Step 1
Marinate the chicken pieces for at least an hour with the lime juice and crushed, skinned and minced garlic
Step 2
Brown the chicken thighs drained from the marinade in a non-stick pan with a drizzle of oil
Step 3
Immediately cover them with a disc of parchment paper and place a slightly smaller saucepan half full of water on top, which will act as a weight, to keep the chicken pieces in shape and brown them better.
Step 4
Continue cooking for about ten minutes over medium-low heat, remove the saucepan and parchment paper, turn the chicken pieces, season with salt and pepper and put the parchment paper and casserole back on top. After 10 minutes, remove the chicken pieces from the pan.
Step 5
Clean the spring onions, also keeping the green part, which you will cut into thin slices and soak in cold water.
Step 6
Chop the white part of the spring onions and brown it in the pan with a drizzle of oil, salt and pepper.
Step 7
Add the blanched, drained, skinned, seeded and coarsely chopped tomatoes.
Step 8
After a few minutes, pour the chicken marinade and the chicken pieces from the skin and bones into the pan and cut each into 2 parts.
Step 9
Pour 1 glass of milk and continue cooking for another twenty minutes.
Step 10
Remove the chicken pieces from the pan again, add the cream cheese and mix with a whisk.
Step 11
Blend everything and season with salt and pepper, only if necessary, pouring a drizzle of oil.
Step 12
Heat the sauce obtained, heat the chicken pieces, mix well, sprinkle with the drained and dried green part of the spring onions.
Step 13
Serve the frango ao catupiri (chicken with milk and spreadable cheese) decorating, as desired, with small tomato slices and accompanying with crispy fried straw potatoes.
