Rice cake with Coco
Dolce di Riso con Coco, also known as functional rice and milk rice, is a dish made of rice cooked in milk and sugar, seasoned with lemon zest, cinnamon sticks, orange blossom water, cloves, etc. generally sprinkled with cinnamon.
It is a popular delicacy in all places where rice is known, as evidenced by ancient texts on the life of the Buddha.
Regional variations
In all the countries of Asia - where rice originates - from Europe and Africa, where it was taken by former travelers and merchants, and from the Americas, where it was taken by European settlers, there is a tradition of sweet rice.
Rice can be cooked directly in milk or in water and sugar, subsequently adding condensed milk or cream.
In terms of toppings or additions, sweet rice also goes well with almonds (as in the traditional Danish culinary recipe), with any type of fruit, chocolate, many spices such as cinnamon and even pandanus leaves (as in the Pyrenees, a recipe from Maldives).
Ingredients
- 3 cups of rice (preferably BASMATI)
- 6 cups of water
- 500 ml of milk
- 50 g of grated coconut
- 1 can of condensed milk
- 200 ml of cream
- Cinnamon powder for dusting
Method
Step 1
Cook the rice only with water. Until the water evaporates completely.
Step 2
When cooked, add the milk, the grated coconut and the condensed milk and boil for 10 minutes.
Step 3
Cook the rice only with water. Until the water evaporates completely.
Step 4
Turn off the heat and add the cream.
